Share your Crock-Pot Recipes!

in Posts

If you are keeping up with my No Dining March challenge, you know that we are trying to cut our dining out budget this month. One of the common reasons that people go out to eat is for the convenience. If you have a meal simmering at home in the crock-pot, you will be less likely to go out to eat.

So share your favorite recipes!

Mine is pretty easy. I take boneless chicken breasts and a jar of salsa. I put the chicken in the crock-pot and cover with the salsa and simmer on low for 6-8 hours. I serve it over a bed of shredded lettuce. And that is what we are having for dinner tonight!

It HAS to be taking 2-3 chicken breasts and put them in the crockpot with a 1/2 a packet (I use 3/4 of the packet) of Italian dressing seasoning and 2 T butter.
High for 4-5 hours.
Then Add:
1 box cream cheese
1 can cream of chicken
sauteed onions/mushroom/gr. peppers (optional)
Cook one more hour and serve over RICE!
This is one of those easy and yummy ones for company!

Pulled pork (or chicken)…. put a pork shoulder (can be frozen) or a few chicken breasts in a crockpot with 2 bottles of bbq sauce. Cook 6-8 hours and shred with a fork before serving on rice, couscous, rolls etc.

You can add onions, peppers or any other veggies to it chopped up.

I LOVE my crockpot!! Last week we got a 3lb boneless turkey breast and put it in the crockpot with a can of chicken broth and cooked on low for 8 hours. It came out so moist and tender. So delicious! We had it with gravy & mashed potatoes!

Can you do this with frozen or does it have to be completely thawed?

7 Kelly March 8, 2010 at 7:56 am

Also another easy one is to take some chicken breasts with a can of cream of chicken, a can of cream of cheddar soup and cook on low for 8 hours. We poured it over some buttered egg noodles.

Greek-like Chicken:
4 split chicken breasts with skin and bone
1/4 cup of vinegar
1 tbsp butter
1 tbsp worcestershire sauce
garlic powder
salt
pepper
Wash chicken. Season each chicken breast with salt, pepper and garlic powder to taste. Place in crockpot. Add butter, worcestershire sauce and pour vinegar to side of chicken (so it doesn’t wash off the seasoning). place lid and cook on low for 8 hours or o high for about 4-5 hours (until chicken is done and not falling off the bone). note: ***Do not add any water. *** If you want to use a few more chicken breasts, still use 1/4 cup of vinegar. Only double the vinegar if you have 8 or more chicken breasts.

My favorite is to make barbeque. I take chicken ( I use cheap with bones and remove the bones later) and any brand barbeque sauce, add to crockpot and fill the rest of the way with water. It is really good, serve on buns!

Mine involved chicken as well. Take 1lb of forozen boneless chicken, 1 package of good seasons salad dressing mix and 1/2 cup water. My families absolute fav!

I will have to try the salsa one, seems like a winner too!

This is actually a Weight Watchers recipe. Take 1 pack of Good Seasonings Italian, 2 blocks of fat free cream cheese, 2 cans of 98% FF Campbells cream of chicken soup and 6 boneless skinless chicken breasts – throw it all in crockpot and cook on low until chicken is done (no longer pink and falls apart). Serve over brown rice or No Yolks egg noodles. SO good!

Reply

17 suzanne March 8, 2010 at 8:59 am

1 more recipe – take a boneless pork shoulder/roast – trim the fat away and put in crockpot with your fave BBQ sauce. Cook on low until the pork shreds/falls apart. Really good pork BBQ with A LOT less fat than a commercial brand BBQ. I like to put in before work and serve on rolls with coleslaw and either beans or a salad. EASY dinner!

Italian chicken is my favorite thing to make in the crockpot. You get frozen chicken boneless in bag and literally dump in still frozen. Add 1 bottle of Italian salad dressing and cook. YUMMY! Serve with whatever side you desire.

This is a WW recipe – take 6 – 8 boneless/skinless chicken breasts, 1 package of Good Seasonings Italian mix, 2 8 oz. blocks of FF cream cheese, 98% FF Campbells cream of chicken – cook on low until chicken is tender/done. Serve over brown rice, No yolks noodles, etc. SO GOOD even my ultra picky 13 yo will eat it!

Add about 3/4 can of water (use soup can) Everything cooks delicoius and then the sauces make like a gravy. Supper easy!!

A crock pot can make any cut of meat tender.
My mother-in-law cooks round steak in the crock pot. Add a can of cream of celery soup and a can of water. The meat will cook tender and then you have a gravy too. Serve with rice.

This was one of the first things I learned to make in the crockpot! (My best friend would make this when we were roomies- this or top ramen. lol!)
We use:
round steak
cream of mushroom soup
potatoes
salt, pepper & onion powder
Season steak then brown in a pan. Put potatoes in crockpot, then steak, then soup. Cook on low 8 hours. Yum!

We love making BBQ in the crockpot as well. Some of my other favorites are easy beef stew, beans and cubed steak.

For Easy Beef Stew I put either a roast or stew meat, carrots, potatoes, onions (optional) and a packet of beef stew season (any brand)and cover with water. I put this on in the morning and let stay in til dinner time. If you have an older crock pot it probably needs to go on high, if you have a newer one low is fine. I have both and the new one def gets hotter.

For cubed steaks I put them in in the morning on low and either cover with brown gravy or Moore’s Marinade. They will be falling apart by dinner.

Dry beans (butter beans are my fave) I put them in on low at night before going to bed and let cook til dinner the next day. I just cover with water, add a splash of oil, salt and ham or bacon if I have it on hand.

I love bbq beef for chicken (not a big pork fan).

I use a chuck roast or frozen chicken breasts and cover it in bbq sauce and cook on low all day.

I have also started making my taco soup with cooked chicken (Schwan’s) instead of ground beef because it’s easier.

Another favorite is red beans and rice with sausage. Cut up a pound of fully cooked polish sausage into the crockpot, add 2 cans of red beans, one can of RoTel and one can of diced tomatoes. I then add water to close to the top (sorry, I am an estimator). Before I serve, I dump in minute rice (again, I eyeball it) and let it sit until all of the rice has absorbed most of the liquid.

I like making rouladen, its a German dish passed down from meine Oma.

Breakfast Steak
Mustard
bacon (do no cook before hand)
pickes
onion (cut into slices)
toothpicks
beef broth
beef bullion cubes

Lay the steak flat, put some mustard on the steak, lay a peice of bacon on top, then pickle and finally onion. Roll up, still with a toothpick or two to hold it together. Repeat for how many ever steaks you have.

Brown the steaks in a frying pan.
Put directly into the crockpot. There are two ways you can do this. 1) you can make your own gravy from the grease in the pan (it thins out) or you can use any broth you want. Beef builion cube are a must.

Leave on high for 6-8hrs or over night.
Serve over spetzla or your favorite noodles.
If you use spetzla, try cooking them in chicken broth.

My family usually does this around the holidays. I make it when I have the time and energy.

My New Favorite is ….
Pork Loin
2 Cans of Cream of Mushroom Soup
Packet of Onion Soup Mix
Herbs … I use Rosemary, Sage & Thyme

Slow cook all day then shred. We like it with mashed potatoes one night and then use the leftover with homemade bread for open faced sandwiches.

My mouth is watering just thinking about it!

Chicken in a Pot

2 sliced carrots (I usually use 6 or so and cut them in large pieces- quarters maybe)
2 onions sliced
2 ribs celery in 1″ pieces
bone in chicken breasts
2 tsp salt
1/2 tsp pepper
1 tsp basil
1/2 C water or chicken broth

Place veggies on bottom of crockpot, place chicken on top and add seasonings and water/broth

cook low 8-10hrs or you can cook it on high for 3.5-5 hrs but make sure use 1 c liquid if you cook it on high.

I make it a full meal by adding cut up potatoes with the veggies. You can do recipe as is and it’s great foundation for soup if you add egg noodles after.
This is a basic recipe that is easy to add/remove your choice of spices and veggies.

I have to add that I have done a whole chicken in the crockpot with great results.

wash and dry a whole bird. Stuff it with some onion, celery or lemon or whatever. Season the heck out of the whole outside. I use rotisserie seasoning. Just drop the bird in – no liquid needed and cook it up on high 5 hrs or so or on low 8-10hrs. Comes out sooooo tender.

My all time favorite is Pot Roast. It is so easy. I buy a big hunk of rump roast or such. I like to dry rub a mix of seasonings, whatever sounds god that day, and then brown in a little oil on the stove top. Place meat, potatoes, carrots, onion, and garlic in your crock pot add a can of beef broth and some herbs to taste. Let cook 6-8 hours on high. So yummy!

Put in crock pot and cook for 6 hours and you have some very nice pulled pork or beef. Great to be served on buns, potaoes, or just alone.

My family loves to make carnitas wet style (meaning we don’t bake it to dry it out at all). Pork shoulder or something similar on sale, thawed. Add taco seasoning, and a 1/2 cup water, cook on low till meat is falling off the bone. Meanwhile we are cooking a big pot of beans in the other crock pot. Shred the pork, serve with warmed tortillas, red rice, and beans. The kids add cheese to theirs. Big party pleaser here, I get requests for this whenever we do family potlucks.

I got this receipe from my mother in law and it is yummy!
Put a whole chicken in the crock pot and add mexican (cant remember the exact name!) seasoning and 1 bunch of cilantro and let cook all day. Take chicken out debone it and add 2 cups of minute rice to the crockpot while deboning chicken. Cut up jalepenos and add to your preference. Put chicken back in and let everything cook together for about an hour. Take tortilas and cut into strips and cook in oil until crunchy. The tortilias, avacodo, and tomatoes are put on the side and added in after you have your bowl fixed up. This is really good!

One of my favorite recipes for the crockpot is Guinness corned beef. Its pretty simple and gives a twist to your traditional corned beef.

4 lb corned beef brisket
1 cup brown sugar (light)
1 can Guinness ( or similar stout beer)

Put all the ingredients into your crock pot and cook on low all day. I cook mine for at least 8 hours to make sure it is nice and tender. You may need to add another can of beer or some water. You want to make sure the whole brisket is covered with liquid or the part that isnt will taste very bitter.

One of my favorite recipes for the crockpot is roast beef sandwiches.

3-4 lb. beef roast (any cut)
1 packet of Au Jus seasoning mix
1 packet of Italian Seasoning mix
3-4 pepprocini peppers (in the jar)

Put the roast in the crock pot, dump in the seasonings, peppers, little bit of water, and just a splash of the pepper juice. Cook on low for 8 hours. Serve on sandwich rolls and top with provolone or swiss cheese. Quick and delicious weeknight meal.

I’m actually cooking in the crockpot right now. My cooking today is a little different, though. I had 2 packages of the chicken leg quarters that have been on sale at publix for $.59/lb in the refrigerator that needed to be cooked. The only way we like to eat this is if they’re cooked in the crockpot. So, right now, I have 9 chicken leg quarters in the crockpot – just pulled the skin off and put them in there, no seasoning or anything. Tonight, when they’re cooked, I’ll use a fork to pull the meat off the bone. I’ll use about 1/3 of the meat for some soup tonight, then freeze the rest in 2 batches. I’ll use those for future meals and it only cost me about $5 (for meat for 3 meals).

I make lasagna in the crockpot. It is so good. I first cook 1 lb of hamburg and a jar of sauce and some pepperoni. Then you make layers in the crock pot. Put a layer of the sauce, then a layer of noodles, then a layer of alfredo sauce, then a layer of mozzerela cheese. you just repeat until the crockpot is full. No need to cook the noodles they come out super moist. Sometimes I add extra kinds of cheese or some veggies. Whatever I have on hand. You cook it on low for 4 to 5 hours.

This is a very quick and easy dinner.
Boneless chicken breasts – cooked
can of green chilies – drained
sour cream 8-16 oz.
cream of chicken 2-4 cans

Mix together and put in the crock pot on low for about 2 hours.

Other ideas: Add crushed tortilla chips and leave them for about 15 minutes until soft. Or, if you don’t have tortilla chips, serve with cooked rice. This is great with homemade tortillas too. You can use the chicken stuff to make enchiladas and top with cheese.

Cabbage soup. This is wonderful with corn bread on a cold winter’s night.

Brown 2 pounds ground chuck pouring off grease. Place in a crock pot. Add 1 medium sized chopped onion, one medium cabbage shredded, 1 can Rotel tomatoes, 2 cans chopped tomatoes, 2 cans chili beans, 5 Tbs. chili powder, 2 Tbs cumin and salt and pepper to taste. Cook on low for at least 5 hours. May cook longer if needed. I love the taste of cumin, so I sometimes add more. If you do not like a lot of spice you may cup down on the chili powder. This is a very forgiving recipe. Hope you enjoy this as much as my family does.

I have 2 “recipes” that I use all the time and that my family loves

Chicken for tacos
I put two chicken breasts in a crock pot and throw in chopped onions, 1 can of diced green chilis and garlic salt. I add about a cup of water and let it simmer on low for 6-8 hours. Then we shred and make tacos or nachos with the chicken.

French Dip Sandwiches
I buy a cheap roast (whatever is on sale) and add the roast, 1 can beef broth salt and pepper and let the roast cook all day until it is nice and tender. Once the meat is cooked, I remove it from the crock pot and add 1 can of water and a package of dried onion soup mix and let that cook for about 30 minutes. The meat is ususally too tender to slice, so we shred it and put in on toasted buns and then dip in the sauce. This one is always requested for birthday meals.

My daughter just reminded me of another favorite and insisted I submit it, so here it is:

Crock pot stew
1 pkg stew meat
3 russet potatoes, peeled and cubed
1 pakage baby carrots
On top of meat and veggies add :
1 can cr of mushroom
1 can cr of celery
1 can tomato sauce
1 package dried onion soup mix
Let it all cook for 6-8 hours on low. The last 1/2 hour we like to add some frozen corn to it.

Take boneless, skinless chicken breast or thighs. I use at least 1 1/2 to 2 pounds, a bottle of chicken wing sauce, 1 teaspoon of butter and cook on high 6 hours. If you like chicken wings, you’ll love this.
I use the mild Texas Pete sauce. It also comes in hot.

5 boneless, skinless chicken breasts on top of that.
I mixed together:
1 can cr. of chicken with mushroom soup
1 can cr. of mushroom soup
and half a can of water and poured that over the chicken.

I let it cook on low for 5 1/2 hours and then added some thawed peas and some parsley flakes and put the crockpot on warm for about 1/2 hour, just until the peas were warm.

I served it over pasta and made some pillsbury biscuits that I had in the fridge. It was really good!

Ingredients: 1 can cream of mushroom soup, 1 package loose sausage, 1 can of biscuits and milk. Cook sausage in large skillet on top of stove… drain sausage, add in 1 can mushroom soup and fill mushroom soup can with milk and add to sausage. Cook till creamy. Pour over your cooked biscuits. This is my version of Hardeez sausage and biscuits. My family loves this even for dinner.

Chicken & Stuffing

boneless chicken breasts ***or pork chop***
cream of chicken soup
Stovetop stuffing (prepared with a little less water than the box says, so its pretty dry)
Layer in crockpot: chicken, soup, stuffing on top

**This cooks super quick- only 4 hours on low! (if chicken is thawed)

My family’s all time crock pot favs would be Crock pot Lasagna and Crock Pot meatloaf! For the lasagna – spray your cooker with Pam (or generic) then assemble your favorite lasagna ingredients layersing it in the cooker as you would in your casserole dish. DO NOT cook the noodles and no, you do not have to get the no boil noodles for this. I always use regular whole wheat lasagna noodles. Anyway, omit the final topping of mozzarella (if you use it) until the last 5 minutes of cooking and cook on high for 1 hour and low for 3. It is our Sunday after church dinner staple! For the meatloaf, spray your cooker, assemble and shape your meatloaf using your favorite recipe and place the loaf in the crock pot instead of the oven. Cook on high for 4 hours or low for 6 – 8 depending how well done you like your meatloaf. Voila!

This is my all-time favorite crockpot recipe. Enjoy!

CROCKPOT ITALIAN BEEF & POTATO CASSEROLE

1 lb lean ground beef
5 1/2 oz box scalloped potatoes
16 oz canned diced Italian style tomatoes
1 small can tomato sauce
½ c water
1/2 tsp oregano
¼ tsp basil
½ tsp garlic powder
1 c shredded mozzarella cheese

Prepare scalloped potatoes as directed on box. Brown ground beef, drain well. Put in crockpot with scalloped potatoes. Add tomatoes, tomato sauce, water, oregano, basil and garlic. Stir to mix. Cover and cook on low for 4 to 5 hours. Turn to high, stir in mozzarella cheese.

I have a few go-to recipes for the crockpot.

Kielbassie and sauer-kraut go GREAT in the crockpot! Take 1 or 2 ropes of kielbassie (I like Hillshire Farms brand. And if you’re counting points, the turkey kielbassie is pretty low and almost as good as their beef kielbassie) cut them up into 2 or 3 inch chunks, then add a few cans or bags of sauer-kraut (no need to drain.) A tablespoon or 2 of brown sugar and some caraway seeds if you have them. Cook on low all day or high for 4 or 5 hours.

Take a hunk of pork loin and a can of whole berry cranberry sauce. Dump the sauce on top of the pork and let it cook.

Aluminum Foil Chicken- A whole roasting chicken. Rinse, and pat dry. Sprinkle with seasoning salt. Throw an onion and some herbs in the cavitiy if you have them. Roll up a few pieces of aluminum foil into balls and put them in the bottom of the pot (You want three or four 2″-3″ balls of foil on the bottom to hold the chicken up off the bottom of the pot.) Put the bird breast side down on top of the foil. No need to add liquid. Let it cook on high (Yes, high, that was not a mistake!) for 7-8 hours. It seems like a long time for the high setting, but it cooks the bird like one of the rotisserie chickens you can buy at the supermarket. The skin is yucky though, so take it off and throw it out before serving.

The following time I read a weblog, I hope that it doesnt disappoint me as a lot as this one. I mean, I know it was my choice to learn, however I truly thought youd have one thing fascinating to say. All I hear is a bunch of whining about one thing that you could repair in case you werent too busy searching for attention.
