Hearty 6 Ingredient Beef Stew Warm up on those cold winter days with this hearty “stick to your ribs,” beef stew. With just 6 ingredients you’ll be enjoying a warm bowl in no time. Personalize this recipe by using your favorite small pasta, I used ditalini here but elbows or alphabets would be great also.
Ingredients:
1 (46 ounce) can tomato juice
2 cups dry small pasta of your choice
2 cups of frozen mixed vegetable
1 onion diced
4 celery stalks diced
1 (approximately 3 pound) chuck roast
Salt and pepper your chuck roast and brown on both sides in a small amount of vegetable oil. Place roast and all ingredients except for pasta in a large pot or Dutch oven. Bring to a simmer and cover.
Continue to simmer until beef is fully cooked.
Remove the beef and cut up into bite size pieces, return the cut up beef to the stew.
Cook your pasta separately according to the box directions. Add your drained pasta to the stew and salt and pepper your dish to taste. I used roughly 1 tablespoon each of salt and pepper. Enjoy!
