This is one of my favorite diabetic slow cooker recipes! My mother-in-law is diabetic and can’t always eat what we want to eat so it’s nice to have this option. Not only is it good for her, but my whole family enjoys it! You will definitely like this recipe even if you aren’t diabetic. Make up a good bit of the pork and freeze it for future recipes, too!
- 1½ tsp garlic powder
- 1½ tsp onion powder
- 1½ tsp ground black pepper
- 1 tsp celery salt
- 1-4 lb boneless pork shoulder roast (the smallest pork shoulder roast I could find was 4 lbs but if you can find one smaller, it'll work great, too!)
- 2 large onions, cut into wedges
- ½ c. water
- 2 c. packaged slaw mix
- 1 c. slaw dressing
- Hamburger buns
- Layer onions in the bottom of your slow cooker.
- Combine all seasonings in a small bowl and rub on meat.
- Place meat in slow cooker and pour in water.
- Cover and cook on low for 8-9 hours.
- Carefully remove meat from slow cooker and discard juices that remain. Shred meat using forks or use your stand mixer to shred meat. Click to find out how.
- When you are ready to serve, mix packaged slaw with dressing.
- Put a layer of pork on a hamburger bun and top with slaw.
