Refried Beans from Slow Cooker Pinto Beans

Ingredients
- 2 lbs pinto beans
- 1 large onion, chopped
- 4 Tbsp. jarred minced garlic
- 1 tsp black pepper
- 2 tsp cumin
- 10 cups hot water
Instructions
- Rinse beans under water and place in slow cooker.
- Add the remaining ingredients. Be sure to pick out any beans that float.
- Cover and cook on high for 4 hours. Reduce to low and cook for an additional 2 hours.
- Salt to taste and serve.

We make refried beans all the time and use them for tostadas, burritos or as a side dish with tacos or enchiladas. But refried beans can be so dry, so I add a little half&half cream and shredded cheddar cheese along with salt, pepper, and onion powder. Just stir all the ingredients together and they taste delicious.
Also for spicy tostadas, you can add cooked beef chorizo to the beans. Just add a little chorizo (or more if you like it really spicy) to the beans and mix together. No need to use salsa, because the chorizo beans are spicy enough but very delicious! Just be careful because chorizo can be too spicy for kids, unless kids like spicy foods.
