I absolutely love cooking in my slow cooker and this recipe for the Slow Cooker Garlic Soy Pork Chops did not disappoint. I love when I can toss potatoes in with a recipe to marinate them too.
- 4 pork chops (boneless or bone-in)
- ¼ cup brown sugar
- 1 tsp ground ginger
- ½ cup soy sauce
- ¼ cup ketchup
- 1 tsp minced garlic
- ¼ tsp crushed red pepper flakes
- 4 Yukon Gold potatoes, cubed
- Place the pork chops and potatoes in the bottom of the slow cooker. Mix the remaining ingredients in a bowl and mix together. Pour over the chops and potatoes. Cook on low 4-6 hours.

I can’t wait to try this! My family loves pork chops, but it’s been too hot to grill. This weekend we’re throwing a wedding shower, so I have 5 Crockpots going (not all mine!)- one with beans, 4 with baby back ribs that will be finished on the grill. I love ribs from the crockpot. The meat just falls off the bone!

I like that idea with the crockpot ribs because when we make them just on the grill they are tough. How long do you cook yours in the crockpot?
