I always wonder why we don’t eat it more often but it seems to stick to being a spring meal. Our favorite way to prepare corned beef is also the easiest way, in the Crock Pot. A one pot dinner, served with a side of red potatoes and cabbage. The Crock Pot keeps your corned beef moist and the juices flavor the cabbage and red potatoes with the saltiness of the corned beef.
Ingredients
1 corned beef brisket with spice packet
1 small head of cabbage
10 red potatoes, quartered
Place your corned beef in your crock pot and add enough water just to cover the brisket. Sprinkle the seasoning packet on top. Cook on high for 6 hours and then add in the red potatoes and cook for an additional hour. Core the cabbage and coarsely chop, add into the crock pot and cook for a 1 more hour. For an extra flavor boost consider reducing the amount of water and add in 6-8 ounces of beer.
