I have taken a box of hamburger helper, cheesy hashbrowns, instead of hamburger I used sausage, then after it was down i added a few eggs and scrambled them up. I mixed that up with some vegetables and turned them in to burritos. One time it lasted my sister and almost a week of breakfast. – Sharon O
My kids are super picky but love homemade waffles for supper. You can get a box of mix for less than 4.00 and it feeds all 4 of us for supper. – Donna D
I keep a gallon freezer bag of all of our vegetable scraps (minus any spicy veggies). When it gets full, I throw it on a pot of water on the stove or in my instapot and make veggie broth. It’s using veggies I already purchased for other meals and I can sub the broth for chicken or beef broth in most recipes or use it as a base for soups and stews. – Rachel A

I buy my pasta when Kroger has the specials less than$1 per package and also stock up on pasta sauces during same deals. I’ll make a pasta bake or casserole that we can get at least 2 sometimes 3 meals out of. — Rachel R

Fried rice has become a weekly addition to our menu. You can use meat or not, any leftover veggies sitting around. It doesn’t get boring because it changes every time. Different proteins depending what we have leftover, different veggies etc. – Shelly N
One thing I’ve been doing is planning meals that the leftovers can be combined. I always make too much spaghetti. This week I also made sloppy joes. Today I’m going to make the fridge clearing pizza bake. I take all the leftovers I can (including mashed potatoes, Mac n cheese and veggies) I toss it all together and add my favorite pizza toppings (or just pepperoni to make it pizza-y), a jar or 2 of pizza sauce and top it with mozzarella. Bake that casserole up and serve with a salad and garlic bread. My family LOVES pizza bake night. I’ve added leftover veggies to the casserole or heated them up for a separate side depending. – Angi W

We have been making egg bakes in our family. I have noticed if I cut it up into serving sizes it lasts longer. I cut them up and stick them in the freezer and my husband grabs a piece at a time to warm up. One pan lasts us 2-3 weeks. – Courtney W
