If you’re in a time crunch, but you want to save a little cash by eating dinner in, then this is a great go to recipe. Prep time is only about 5 minutes, and bake time is 25, so in only 30 minutes you’ll have a hot meal on the table.
All you need is a bag of yellow rice (we use the 10 oz. Vigo brand)
one chicken breast
2 1/2 cups of water
2 TBSP of butter
9×13 in. glass dish
*Preheat your oven to 460 degrees
*Empty your bag of rice into the 9×13 glass dish, and spread evenly.
*Slowly add 2 1/2 cups of water, making sure to cover all the rice.
*Place 2 TBSP of butter anywhere in the dish.
*I guesstimate, and place 4 small dollops randomly in thepan.
*Lastly, pound your chicken flat and cut into even strips.
*Then cut into 1/2 inch or 1 inch cubes and distribute throughout your pan.
That’s it! Cover your dish with aluminum foil, and place in a 460 degree oven for 25 minutes.
Your rice and chicken will be perfectly cooked. Add in a side salad, or some garlic bread, and you have a full meal in only 30 minutes.
This recipe is enough to feed my family of 4, and we still usually have a little left over. You can adjust the recipe as needed, in order to accommodate how many people you are intending to feed.

Is “yellow rice” instant? We normally use brown rice due to health reasons, etc. Would this work with it even though it’s not instant?
