Chicken is a staple of our diet, so I am always on the lookout for a new flavor profile to feature with our favorite protein.
This fajita chicken recipe can be made in one pan for easy cleanup! You can serve by itself, over rice for a burrito bowl, with some taco shells for some zesty tacos, or even a top a salad.
Oven Chicken Fajitas
Ingredients
- 2 lbs Chicken breasts (Boneless thighs can be easily substituted!)
- 1 Vidalia onion
- 1 bell pepper
- 1 jar of salsa (15 oz)
- 1 can diced tomatoes
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 packet of taco seasoning (see below for my homemade version!)
Taco Seasoning
- ½ tsp black pepper
- ½ tsp onion
- ½ tsp cayenne pepper
- ½ tsp oregano
- 1 tsp salt
- 1 tsp garlic
- 1 tsp cumin
- 1 tsp red chile powder
Preheat oven to 400 F.
Line a sheet pan with tin foil. If you don’t have a sheet pan, you can easily do this recipe with two cookie sheets. Just separate your chicken and veggies.
Slice your onion and pepper to the desired width. I like an inch width, about as wide as a finger. Place on the edges of the pan.
Slice your chicken breasts length wise and place in the center of the pan.
Season both sides of the chicken breasts well with the taco seasoning. Salt and pepper the vegetables.
Drizzle olive oil over the entire pan.
Mix your jar of salsa and diced tomatoes. I like to use a food processor to get the diced tomatoes the same texture as the salsa, but if you don’t have one, no worries!
Evenly pour the salsa/tomato mix over all the chicken.
Cook for 20 minutes, or until the vegetables are lightly browned.
Once out of the oven, let the chicken sit for 5 minutes. Leaving the salsa on top, slice the chicken.
When all the chicken is sliced, mix together in a large bowl. You can add the veggies or serve them on the side.
If you want to get really crazy, squeeze some lime or add some diced cilantro. Enjoy your fajitas!
