When you are making multiple batches of baked goodies, you need to quickly cool the baking sheets or else your cookies will come out unevenly baked or your biscuits will burn on the bottom before browning on the top. All you need to do before putting your next batch on the same cookie sheet you just took out of the oven is to run it under some cold water for a few seconds.
If you are really in a time crunch, turn your baking sheet over and run the water down the underside. That way, you won’t have to dry it off. Once cooled, you can put your next batch of cookies or biscuits on the same cookie sheet and pop it back in the oven for delicious baked treats.

it’s bad to put a hot pan under cold water. it will cause thermal shock and make the pan warp
I just wave mine around in the air quickly back and forth. It cools them down quickly without using anything else.
