My family is loving my slow cooker dinners. My kids new favorite is tacos, so I thought I would try out a new recipe. My daughter loved the avocado salsa. Score!
- 1 c. salsa (use whatever kind your family loves)
- 1 tbsp lime juice (or juice from 1 lime)
- 1 tsp onion powder
- Hot sauce (optional)
- 4 chicken breasts, cut into strips or chunks
- Flour tortillas
- 2 avocados, cut into small pieces
- ½ red onion
- ¼ c. cilantro
- 1 tbsp lime juice
- Mix the first 4 ingredients together and set aside.
- Place chicken in slow cooker.
- Pour salsa mixture over chicken and cover.
- Cook on low for 5 hours.
- Remove chicken and shred. Then return shredded chicken to slow cooker.
- Stir the last 4 ingredients together to make your avocado salsa.
- Serve chicken on flour tortillas and top with avocado salsa.
