This slow cooker potato soup is honestly the best potato soup I’ve ever had. Hands down. My house smelled SO good while this was cooking and we couldn’t wait to eat it. I even had some left over that I ate for lunch yesterday.
- 10 red potatoes, cut into cubes
- 3 tbsp flour
- ¾ c. real bacon bits
- 1 small onion, chopped
- 1 clove minced garlic
- 2 tbsp chicken bouillon granules (or 6 cubes)
- 1 tbsp ranch dressing mix
- 2 tsp dried parsley
- 1 tsp seasoned salt
- ½ tsp black pepper
- 3 c. water
- 1 c. half-and-half
- 1 c. Cheddar cheese (+ extra for garnish)
- green onion to taste
- Place potatoes in the bottom of your slow cooker and sprinkle with flour. Stir potatoes around to coat them all.
- Add the next 9 ingredients into slow cooker and stir.
- Cover and cook on low for 8 hours.
- Pour half-and-half into slow cooker and 1 c. Cheddar cheese.
- Cook for an additional 15 minutes.
- To serve, sprinkle some more cheese on top and garnish with green onions.

Do you have to use red potatoes or can I use regular idaho potatoes

What if I put the half and half in before it said? Does it make a difference? Did I ruin it?

What a great recipe! I made this tonight for my family and it was the absolute best we’ve had yet. However, I made a few changes to the recipe. I added 2 1/2 cups of chicken stock instead of using the bouillon cubes, I didn’t add any seasoning salt or white onions, but I did use 2 cups of half and half and 2 cups of cheese for extra cheesiness. I also cooked on high for 4hrs, we were a little impatient and it smelled so good. Will defiantly recommend this recipe.

I want to make this. Do I need to peel the potatoes first?
You can, but I did not. However, my mother made it recently and she doesn’t like the skin so she peeled them and said it turned out just as yummy. So I think it’s a preference thing. :) I hope you like it! It’s quickly become a favorite at my house!
I have this cooking now… 9 hours seems a bit long though, were your potatoes still a good consistency after that long? I cut my potatoes into 1″ cubes….I’m thinking of checking it after 5-6 hours. I’ll let you know how it turned out!
