Take a stick of real butter and beat it with a hand mixer. You get the quantity of two sticks of butter from one!
Don’t have real butter? This trick works with butter and margarine:
1 lb. butter or margarine (softened to room temperature)
1 envelope of Knox gelatin
2 C skim milk
Soften the package of gelatin in 1/2 cup of skim milk. When softened stir over low heat till dissolved and add to remaining milk. Beat (medium speed on electric mixer) into the butter or margarine that has been softened to room temperature. When thoroughly mixed put in covered containers and refrigerate.

I have a different way. I let two sticks of butter soften. Then I put them in the blender with a cup of canola or Smart Balance oil. Blend well and store in the fridge. It still tastes like butter but is soft and healthier!
