Homemade Hummus
Instead of buying store bought stuff, I decided to try and make some homemade hummus. Several of the recipes I found online call for canned chickpeas, but I didn’t want to use canned stuff. So I cooked the chickpeas the same way I made these Slow Cooker Beans and my hummus turned out amazing!
- 2 c. cooked chickpeas
- ¼ c. lemon juice
- ¼ c. tahini
- Half of a large garlic clove, minced
- 2 tbsp olive oil, plus more for serving
- ½ to 1 tsp kosher salt, depending on taste
- ½ tsp ground cumin
- 2 to 3 tbsp water
- Sprinkle of paprika
- In your food processor, combine tahini and lemon juice together for a good minute. Turn off food processor and scrape sides and bottom of bowl, and then process for another 30-45 seconds until smooth.
- Add the olive oil, minced garlic, cumin and the salt. Process for 30 seconds, scrape sides and bottom of bowl then process another 30 seconds.
- Add 1 c. of the chickpeas and process for 1 minute. Scrape sides and bottom of bowl, add the rest of the chickpeas and process for another minute or 2 until smooth.
- If your hummus is too thick or not creamy enough, add 1 tbsp of water at a time and process until desired thickness/smoothness.
- To serve, transfer hummus to a bowl, drizzle with olive oil, and sprinkle on some paprika.

Kristin’s Kitchen: Grilled Steak
We went to my friend Michelle’s house the other night for dinner and her husband grilled steak. He makes his own marinade and it gives the meat so much flavor that I asked him if he would share his recipe.
- 1 c. Dale's Steak Seasoning
- 3 tbsp minced garlic
- Southern Flavor to taste (he used at least 2 tbsp)
- Mix all ingredients together and pour in the bottom of a casserole dish.
- Place your favorite cut of steak in the marinade and put in the fridge for at least 30 minutes.
- Turn steaks over and let sit in the fridge for an additional 10-20 minutes before grilling them.
Summer is here and with it comes the heat. When I use the oven, it heats up the entire house. But when I use the slow cooker, the air conditioning doesn’t have to turn on while I’m cooking. Kristin’s Kitchen: Homemade Taco Seasoning
One thing my friend Tammy made for me when she was visiting a while back was homemade taco seasoning. She said once I tried it, I would never use the envelope kind again. And boy was she right! This stuff is amazing!
- 4 tbsp chili powder
- 3 tbsp paprika
- 2 tbsp cumin
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp cayenne pepper
- ½ tbsp salt
- Mix well with a fork. Store in an airtight container.

Kristin’s Kitchen: Bruschetta
Next time you are having Italian night at your house, try this easy bruschetta recipe as an appetizer or an accent to your main course!
- 1 jar good pasta marinara
- 2 oz goat cheese
- Preheat oven to 350.
- Pour marinara into an oven safe bowl.
- Crumble goat cheese over marinara.
- Heat in oven for 10-15 minutes. Just until the marinara is warmed through through.
- Serve over the garlic bread.

Kristin’s Kitchen: Chick-fil-A Sauce
I absolutely love Chick-fil-A’s sauce. However, sometimes I want it at home with meals I make instead of just when I’m eating at their restaurant. Or if I make my kids chicken nuggets to take for lunch, they love to have some in their lunchboxes for dipping. I found this recipe the other day and let me just say that this stuff tastes just like the real deal. Try it yourself. You won’t be disappointed. But if you make this, you’ll need something to dip into this tasty sauce. Check out my chicken nuggets recipe!
- ½ cup mayo
- 2 tbsp. mustard (regular prepared yellow mustard)
- ½ tsp. garlic powder
- 1 tbsp. vinegar
- 2 tbsp. honey
- Salt and pepper, to taste
- Mix all ingredients together.
- Let chill in fridge until ready to eat.

Kristin’s Kitchen: Homemade Salsa
Friday, I posted the Oreo Dirt Cake recipe I served at my son’s birthday party. Here’s another simple recipe I whipped up and served with tortilla chips. I wanted kid friendly food and store bought salsa is sometimes still too spicy for little taste buds. This was perfect and the kids loved it!
- 1 can diced tomatoes
- 2 tbs lime juice
- 1 tbs red onion, diced
- 1 tbs cilantro
- 1 tsp black pepper
- Salt to taste
- Combine all ingredients in a bowl and serve.
- If you like less chunky salsa, you can puree in a blender and it's just as tasty!
