Wait! Don’t throw out your ripe bananas! This tip is from reader Leigh –
When you have bananas that are about to go bad, instead of throwing them away, peel them, cut them into chunks and freeze them. You can use these frozen to make smoothies and ice cream or thaw them out as needed to make bread, pancakes, cakes, muffins, etc. The best recipe for banana ice cream is to put frozen banana chunks into a blender or food processor and you have cheap, healthy, instant banana ice cream!

Perfect for a summer sweet treat for our new Yonanas machine! We recently had a guest at our home for several days and he asked “why do you have SO many bananas?” he he :O)

I often freeze whole unpeeled bananas. Then when needed I thaw them, cut the tips off, and squeeze out the liquified banana into my bowl to make banana bread. They look rather odd in the freezer and my kids don’t like watching me squeeze the banana out but there’s zero prep time involved in the freezing and there’s no need to mash the bananas when making baked goods.

I do this as well. It is lazier than cutting it up. When I get several in the freezer at the same time I know it is time to make the bread. I either set them on the counter and defrost them or put them in the microwave and use the defrost setting. Works great either way!
