One of my favorite ways to save money and feed my family their favorite meal… I save the crumbs from crackers and chips, cornflakes and bread heels.
I put all the crumbs in a large ziplock bag in my freezer. When I have enough, they go into the food processor til the crumbs are small enough. I dip the chicken pieces or tenders into ranch dressing and then coat with the crumbs.
Spray with a bit of Pam and bake at 350* for 20 mins or so, depending on the size of the chicken.
My family loves this recipe and it’s never quite the same because of the different types of crackers or chips we buy. (We buy everything from Goldfish to different flavored chips and crackers)
I love that nothing goes to waste and that my family can get ” fried chicken” but in a healthier way.

That’s a new idea. I’ve used crumbs from chips and cereal in meatloaf – adds to the mystery of the meatloaf… ;)
