With the rising prices of eggs combined with the need to have them for specific recipes, I thought it would be helpful to list out some of the common substitutes for eggs. Let me know which one(s) you’ve tried and tested!
This is one that I commonly use. You can substitute 1/4 cup of applesauce for an egg. I usually use unsweetened when I have it. Cinnamon isn’t bad in baked goods where you won’t mind the taste.
Vinegar and Baking Soda
Mix 1 tsp of baking soda and 1 tbsp of vinegar to replace an egg in baked goods. This makes the baked goods light and airy. Just mix the 2 together and then add to your recipe.
You can use 1/4 cup of plain unsweetened greek yogurt for each egg. Great for baked goods.
Mash up a banana or other pureed fruits like pumpkin or avocado and add to baked goods. The rule of thumb is 1/4 cup of puree per egg.
Water, Oil, and Baking Powder
Mix 2 tbsp water + 2 tsp baking powder + 1 tsp vegetable oil to make a large egg. Mix these together and add to any recipe that you are making.
