Gosh is it a nice feeling not going into a grocery trip being super stressed about budget. Thank you, Great Grocery Experiment! And thank you, Saving to Disney, for refining my budget techniques, allowing for things like family growth and special needs diets. You da best.
This was a pretty by the book trip, with some Best Customer coupons allowing me to spurge on meats. And it is about meats that I would like to talk today. Specifically, my family’s favorite meat: chicken.
You thought I was going to say steak, didn’t you?
Or maybe you thought I would say sausage.
And at least one of you thought it was going to be fish.
The truth is, the B family loves all the proteins equally. (Except pork. I love a bacon, but cannot get behind just plain ole’ pork in a meal. I have tried, but I just can’t get excited about it. Sorry, pork chop fans.) We buy chicken the most because 1) it is the best value per pound and 2) it the most versatile for meals. There are some weeks that are all chicken all the time, which, awesome.
But part of my Grocery Resolutions was to try a new meal every week. I put that on pause when I was data gathering for the experiment, because I like to focus on one thing at a time. But now we’ve got a budget, so I need to be searching for some new meal ideas. I’d like to start with chicken because it’s the protein I’m most often working with.
What chicken based meals do you LOVE? I’m not looking for specific recipes, per say (but I’ll take those, too!) as much as meal names/ideas. For example: we were watching the animated classic Aladdin the other night, and this scene popped up.
The Genie mentions “Chick ala King.” And the Glass Slipper turns to me and says, “why don’t we ever have Chicken ala King?” And I am like, “girl, because I do not know what it is.” Turns out, Chicken ala King is a delicious sounding cream based chicken sauce that includes pimentos and mushrooms that can be served over pasta, toast, or biscuits. The more you know!
So help me out with some chicken dishes. Here are the ones I’ve got covered.
- Chicken Enchiladas
- Chicken Noodle Soup
- Creamy Green Chile Chicken Soup

- Chicken Parmasean

I like slow cooker chicken and dumplings. That may not work for your diet needs. But, there you go.

Ohhhh, this sounds delish. I could get behind some chicken and dumplings! Thanks, Sarah!
