My go to recipe is for Darn Good Chocolate Cake. It’s always a hit.
Oil spray for misting pan
Flour for dusting pan
1 pkg, (18.25 oz) plain devil’s food cake mix
1 pkg. (3.9 oz) instant chocolate pudding
4 lrg. eggs
1 c. sour cream
1/2 c. warm water
1/2 c. oil
1 1/2 c. semisweet choc. chips
Place rack in center of oven & preheat to 350. Lightly mist 12 c. Bundt pan w/ spray, then dust w/ flour. Shake out excess flour. Set pan aside.
Place next 6 ingred. in large mixing bowl. Blend w/ mixer on low for 1 min. Stop and scrape down sides of bowl. Increase speed to medium & beat 2 – 3 min. Scrape down sides of bowl. Batter should look thick & well combined. Fold in chips. Pour into prepared pan. Place in oven.
Bake til cake springs back when lightly pressed with your finger & just starts to pull away from sides of pan, 40-50 min. Remove pan from oven & place on wire rack to cool 20 min. Run a long, sharp knife around edge of cake & invert onto rack to cool completely, 20 min. (Store cake, covered in foil or plastic, @ room temp for 1 week. Or freeze it, wrapped in foil, for up to 6 mths. Thaw cake overnight on counter before serving.

I like to take our family’s favorite pasta dish! :) It’s bowtie pasta, chicken (baked with Italian seasoning and then chopped), roasted red peppers (from the jar and chopped), feta cheese, and parsley. Cook the pasta as directed. Then, heat up olive oil and garlic in a skillet and throw in the chopped chicken and peppers; mix well. Toss pasta, chicken mixture, cheese and parsley all together in dish. One of the reasons I like this recipe so much is because it heats up well. It marinates in the fridge in the olive oil, so the next day it’s almost better!

If there are no diet restrictions, I always bring over a ham and swiss cheese casserole.
1 package of cooked cubed ham
8 oz of sour cream
2 packages of Swiss cheese
8 oz of cooked elbow macaroni
Mix ham, sour cream, 1 1/2 packages of cheese & elbow macaroni together in a casserole dish and add the remanding cheese on top. It cooks for 30 @ 350. I usually send a side of green beans and rolls along with dessert.

Tater Tot Casserole. It’s the ultimate in comfort food.
1 lb hamburger (I’ve also substituted ground turkey or ground chicken & had it come out tasting just as good)
2 cans creme of anything soup (I usually roll with one mushroom, one celery for hamburger — Or I’ve also done it with chicken & cheese & it was SO good!)
1 bag of tater tots
a little bit of shredded cheese to taste
Line the bottom of a casserole dish with hamburger
Spread on top the 2 cans of soup
Sprinkle on bag of tots in a single layer
Sprinkle on cheese
Throw in the oven on 350 for about 45 minutes or until meat is fully cooked.

I am not a super cook – I usually bake a chicken and make corn bread and a salad. If I am not bringing dinner I will make several dozen choc chip cookies.

Swiss Chicken
Layer 6-8 boneless, skinless breasts in baking dish. Cover each breast with a slice of swiss cheese. Mix 1 can cream of chicken with 1 can of water and pour over chicken. Melt 1/2 stick butter and mix with about 3/4 cup of herb stuffing. Cover chicken with stuffing and bake at 350 for an hour.
Usually I divide the recipe into 2 baking dishes and take 1/2 to someone and save the other 1/2 for my family’s dinner. There’s plenty to share!

I take salad, chicken casserole, rolls & toll house pie.
Chicken Casserole
1 can cream of chicken soup
1 can cream of mushroom soup
16 oz sour cream
2-3 cups cooked shredded chicken
1 sleeve ritz crackers, crushed
1 stick butter
Mix together soups, sour cream & chicken (can add a little stock if too thick). Put into 9 x 13 pan. Top with crushed crackers then pour melted butter over. Bake at 350 until brown & bubbly. YUMMY!!!
Toll House Pie
Frozen deep dish pie crust
2 eggs
1/2 c sugar
1/2 c brown sugar
1/2 c plain (all purpose) flour
3/4 c butter (not margarine)
1 c chocolate chips
1/2 c pecans (optional)
Preheat oven to 325. Beat eggs until frothy. Add sugars & flour. Beat until smooth. Beet in softened butter. Stir in choco chips & nuts. Pour into pie crust & bake 45 minutes – 1 hour at 325. Serve warm with ice cream & a cup of coffee. Tastes just like a hot from the oven chocolate chip cookie!

I just took a friend who had a baby over the weekend a meal of lasagna, salad, garlic bread, and a little dessert. Plus, no dished need to be returned.

Broccoli, rice, chicken and cheese casserole! Reheats well. Cooked chicken breast ( I boil in chicken broth)/white rice cooked to package directions/cream mushroom soup/steamed or frozen broccoli Mix ingredients together in a baking dish and top with shredded yellow cheese! A dessert of pie or brownies

Generally, I will bring a pasta dish (like spaghetti), a chicken rice dish or a pizza with a salad and dessert. It depends on the family and if they have children. Sometimes I will bring a second smaller frozen meal for them to use a bit later.

Right after someone has lost a love one I take over food for them to be able to share with others as they pop by. I will cook a bunch of boneless chicken in the crock pot and then add BBQ sauce for pulled chicken sandwiches. I get a big bag of rolls from Costco or Sam’s Club (30 dinner rolls) for the sandwiches. I also make a big bowl of pasta salad. I use the wacky pasta if I have it or just the rotini pasta, with broccoli, carrots, zucchini, cherry tomatoes and any other nice fresh vegetables I might have on hand. Add a can of black beans and/or pinto beans rinsed and drained. then toss in my favorite italian salad dressing. It is always a big hit.

I love takethemameal.com It’s free to use and they have recipes on their site. They also have a facebook page. You can set up a schedule with friends, church members, etc so all their meals are taken care of for a certain period of time. The scheduling tool on there is free to use. I usually do a casserole type thing or lasagna in a disposable tray so they don’t have to return it. I may include a salad or a side or a dessert, if I have time.

TakeThemAMeal is fabulous!!! I am a MOPS coordinator and this free service has been a tremendous help to us!! They also have one for coordinating potlucks so not everyone brings the same thing!!
As for what kind of meal I take to others, I make something my kids can help with. Bringing meals to people that are in a hard spot or just had a baby is something I’ve used to teach my children compassion and service. We make meals once or twice a month – our favorite is lasagna roll-ups. Use your fave lasagna recipe, but instead of layering it, once the noodles are cooling on the wax paper, line them down the middle with your ricotta/cheese mixture and roll up. Sauce the bottom of a pan, put the roll-ups in and smother in sauce and top w cheese. Once baked, throw on some fresh herbs…delish and easy to serve bc the rollups act as individual portions! :)

Spaghetti pizza and/or apple pie. Or chicken and noodles. Can’t share the apple pie recipe. ;) spaghetti pizza, basically cook some spaghetti, mix with enough mushroom soup to well coat, put in pan, top with pizza sauce, and favorite toppings, and lots of mozzarella. Bake at 350 til bubbly. Can be refrigerated then heated up later.
Chicken and noodles. Chicken pieces in rich broth, add noodles: 1 c flour, 1 egg. take your egg shell and pour milk into half of it. mix flour egg and milk, roll and slice. each recipe of noodles is enough for about 2 people. cook for about 15 minutes.

Sausage and wild rice casserole…(this was brought to my sister when she had my nephew and now I love it)
Ground sausage(cooked and drained)
wild rice (cooked according to directions on package)
small thing of sour cream
and 1 can cream of mushroom soup
Mix together and bake in oven for 30 min at 350 degrees.

I always make chicken pot pie. It’s a family favorite and everyone loves it! I make Ina Garten’s recipe with a few changes. I also always make some sort of baked good. Usually cake pops or decorated sugar cookies because they are so yummy and easy to personalize. :)
