This is one of my all time favorite recipes! It’s yummy, easy, versatile, feeds my large family with lots leftover and freezes well. Besides who doesn’t love taco Tuesday.
For the marinade:
1/2 cup vinegar
1/4 cup olive oil or whatever oil you like
Juice from 3 lemons or limes or 1/4 cup
2 tablespoons
Southwest seasoning blend or whatever seasonings you like
Ingredients:
2 lbs Boneless Skinless Chicken Breasts
1 pack of taco seasoning mix
1 jar of salsa
tortillas corn or flour
Directions:
Place the chicken in a gallon Ziploc bag. Mix up the marinade and pour it over the chicken. Let it soak up all that goodness overnight. Add the marinated chicken to a crockpot, taco seasoning packet, and salsa. Cook on high for 4-6 hours. Use a ladle to drain some of the excess juice off the chicken salsa mixture. Use 2 forks to shred the chicken. Warm the tortillas, place a little of the chicken mixture on each tortilla to make tacos. Serve with a chopped tomato, lettuce, and queso fresco.

Never thought of making it this way. Better to use a blender to shred the chicken, rather than forks. REALLY try it! Just make sure not to splash any juice that remains. My husband says he shreds chicken like a BOSS.
