It’s hot here in Alabama. And turning on the oven to cook makes it that much worse. I like to cook recipes in my crockpot when I can. There is an awesome blog called 365 Days of Slow Cooking that has a ton of recipes if you are looking for inspiration.
Plus here is my favorite:
1 Beef Roast (any cut)
1 package of Onion Soup Mix
Potatoes, Carrots, Celery, etc diced and covering the roast
Either water or a can of reduced fat cream of mushroom soup
Cook on low for 8 hours

I love the crockpot so much- it takes up so little energy and makes a yummy meal <3. We even cook whole turkeys in ours! :D (I have 4 sizes/shapes hehehe)
Love my crock pot. Have been living by it for years! We cook all types of beans in it as well. And any kind of soup. Chili and taco soup in the crock are great when you are having a house full of people. I can prepare everything before they get here and them spend the time enjoying them instead of cooking:)

We like to put a beef roast in the crock pot with a can of broth and a jar of pepperoncini peppers. Cook all day, tear up meat as it becomes tender. Drain slightly or fully and reserve broth for dipping. Serve on hoagie buns. AWESOME!
I like to put a whole chicken in the crockpot. I use the season packs you get when you are going to roast it in the bag.
Whole chicken
1 bag carrots
1 large onion
5 medium potatoes
season pack mixed with 1 1/2 cup water
Pour a little in the bottom of crockpot then place chicken put veggies around then pour rest of mixture.
Low for 6-8 hours. Hubby loves it when I make this, with the left over chicken I make enchiladas the next night.

One of my favorites is you take 6 bonless chicken breasts a bottle of catallina dressing, can of whole cranberry sauce and a package of lipton onion soup. Simmer for 5 to 6 hours and serve over rice.
Easy as can be, had BBQ pork sandwiches tonight.
4 pounds pork shoulder, bone in. Put on low, about 8 hours. If not falling apart, put on high for last hour. (My crock pot is new, so it is a better performer then the older modle we started off with.) Put fat side down, no need to add any liquid. You can even cut into the meat, to allow more seasoning and to use less cook time. Only season with salt and pepper, or even a few pressed cloves of garlic. Remove pork and empty out juices and put back together, cooking is not done. ;)
With a fork, or hands, shred the pork and put back in crock pot, with lots of yummy BBQ sause. I use Sweet baby Rays, had some awesome coupons and stocked up for the year. (My very first stock pile item.) Not to mention the best BBQ sause, over the counter, I have ever tasted. Cook in crock pot on high for half hour, low for an hour if ya got the time. Place on warmed up buns, keep on warm in crock pot for seconds, and you have a meal that makes a family of 6 happy with left overs. I actually healed off enough pork for a second night of dinner, with out the BBQ, we will do Mex with that. ;)
Roast chicken is SOO easy. Rinse a whole chicken and stuff the cavity with a lemon cut in half and a couple sprigs of fresh rosemary. Sprinkle the top of the chicken with salt, pepper, garlic powder, and paprika. Fill the bottom of the crockpot with quartered potatoes and baby carrots. Place the chicken on top, cover, and cook on low all day. Fall off the bone tender, delicious flavor…and leftovers make a great chicken salad.
I cook a small turkey breast or small chicken in the crock pot– stick of butter and salt and pepper around 6 hours Yummy!!

I actually bring the cooker with us when we travel to DisneyLand. In fact, I did a demo at the CA Adventures food & wine festival and told the audience that’s a great way to save $$. LOL. not sure the people who lined that up thought I was going to do/suggest that…
I like to “lazy cook” and bring frozen chicken or meat in a ziplock and a jar of salsa, or bottle of bbq sauce. I simply plop the meat in frozen, cover with the sauce and let it cook all day. We’re GF, so I also bring already-cooked rice in ziplocks, then microwave and serve the shredded meat on top. If you’re not GF, serve the meat in hoagie rolls. Usually I can get a full dinner and 2 lunches out of a crock for our family of 5 (the baby is only 19 mos, though).

I make “apple chicken” which is actually Apple Butter Porklion. (My son only eats “chicken” so EVERYTHING is chicken!!! It’s sooooo easy! 1/2 a jar of apple butter, 1/2cup of apple juice and cook on low all day!
I LIVE for my crock pot as a working mom with 2 boys (7yrs and 1yr) and a husband who works nights. My crock pot is my one and ONLY BFF!!!
I use my crockpot(s) all the time. But we have a favorite warm cider that we LOVE during colder weather, and put over ice during warmer weather. The recipe came from Taste of Home’s Everyday Slow Cooker & One Dish Recipes 2008 book: Spiced Tea Mix
1 jar (21.1 oz) Tang
1 jar (6 oz) sugar-free instant lemon ice tea mix
2/3 cup sweetened lemonade drink mix
2 teaspoons ground cinnamon (I prefer to use Pumpkin Pie Spice)
1 teaspoon ground cloves
— In an airtight container, combine all above ingredients and store in a cool, dry place for up to 6 months.
To Prepare Punch:
In a 3 qt Slow Cooker, combine 2 quarts of apple juice OR cider, 1 1/2 cups cranberry juice, 3 cinnamon sticks, and 1/4 to 1/3 cup tea mix from above. Cover and cook on low for 4 hours.
I LOVE 365 crockpot,I can’t tell you how many recipes I’ve used. Here is one but I didn’t get it from there. It’s a great party recipe, tailgating or good for teens’ sleepovers, it makes quite a bit.
Party Pleasing Beef Dish
1-2 lbs browned ground beef (or ground turkey)
1 med. onion, chopped and cooked with beef
3/4 c. water
1 8oz. can tomato sauce
1 6oz. can tomato paste
2 tsp. sugar
1 garlic clove minced
1 tsp. chili powder
1 tsp. dried oregano
1 c. cooked rice
tortilla chips
toppings—sour cream, olives, cheese, lettuce, taco sauce, etc.
Stir together 1st 10 ing. in cp. Cover & cook low for 4 hours. Add rice, cover and cook 10 mins. longer. Serve over chips and toppings.
I have put the rice in before uncooked with the other ing. and just had to add water as it cooked, since rice soaks up water, but I wanted to eliminate cooking rice. But if I have leftover rice, I just follow the recipe.

I add a bag of frozen veggies so it’s more of a dumplings-potpie hybrid. This barely doubles in the crockpot. Do NOT attempt to triple! Dumplings take more like 2 hours to cook.

I use this recipe for meatloaf too and put it in my muffin pan at 350* for 20min for fast meatloaf. My son doesn’t like mashed potatoes at all (!!) but you could use them to “frost” the cupcakes.

Our family loves this:
4 frozen chicken breast
1 Jar of Spaghetti Sauce
1 Package of Frozen Pepper Stir-fry
Mix all together in Crock pot. Cook on low for 8 hrs. And serve over rice. :)
1 package of frozen chicken breast
1 can of black beans
1 jar of salsa
I packet of taco seasoning
5-6 hours on low
then 30 minute before done add 1 package of cream cheese
We buy homemade torillas from our local mexican food place and put the mixture in the tortillas. Soooo YUMMY
A recipe my MIL calls Italian Beef Bake. It’s good for cheap cuts of meat.
1-2 lbs of round steak cut up into strips
1 can of diced tomatoes
1 can of tomato sauce
1/4 cup of green peppers
1/2 cup of diced onions
2-3 TBSP of steak sauce
1 packet of onion soup mix.
1-2 cans of water (Kind of keep an eye on it.)
Cook on low for 8-10 hours. Serve over rice or mashed potatoes.
Beef Tips:
meat for stew
1 can cream of mushroom soup
1 can golden mushroom soup
1 can french onion soup
Dump everything in crock pot and cook on low for about 8 hours. Serve over egg noodles or rice. EASY!

CHICKEN & DUMPLING SOUP
3 pounds boneless, skinless chicken
1 chopped yellow onion
1 c. mushrooms
2 cloves garlic
16 ounces frozen mixed veggies
2 cans of cream of something soup OR MAKE YOUR OWN W/
4 Tbls butter
6 Tbls flour
1 c. milk
1c. chicken broth
1/2 tsp salt
1/4 tsp pepper
1 tsp poultry seasoning
1 can refigerated biscuits, cut into quarters
Put the chicken and all the veggies in to the bottom of the crockpot. Add the cream of soups or your homemade alternative. Cover and cook on low 6-8 hours or high 4-5 hours. An hour before serving, shred the chicken and dropp in the quartered biscuit dough. Cover and cook on high for another hour. The biscuits are done when you can insert a knife and it comes out clean. They will be spongey and brown a little on the sides.
Pork chops (not thin!)
2 cans cream of mushroom soup
2-3 cans sliced potatoes (drained)
Chopped up onions
Season pork chops with Toni’s, place bottom of crock pot, sprinkle onions on top, pour soup over pork chops.
Cook 6-8 hrs!
Serve with warm bread and a salad!
This is a rockin’ white chili recipe my friend shared with me & it’s my fave to make in the crock pot.
2 cups chicken breast, cooked til it’s still just slightly pink in the middle, cubed or diced.
1 container chicken broth
2 cans tomatos (I like to use diced with onion & peppers)
3 cans white beans (I use 2 white & 1 white kidney)
1 medium sized white onion
1 bell pepper (I prefer green but use whatever color you like)
1 mini can jalepenos
Salt & Pepper to taste
Throw it all in the crock & let stew as long as possible (I usually do mine overnight).
when I freeze chicken breasts, I put 5 or 6 in a ziploc bag and pour the marinade in there with it before freezing. Then you just empty the whole bag, frozen, into the crock pot and let it cook all day. you can’t get any easier than that!
my favorite marinades are bbq sauce, Italian dressing, Lowry’s Lemon Pepper, and Lowry’s Garlic/Herb.
Chicken and Rice
4 Chicken Legs
Water
Salt
Rice
Place Chicken and water in crock pot and cook until you get off work (4-8 hours)
Remove bones from chicken and return meat.
Add as much rice as you would need for your family and allow to cook 10 to 30 minutes depending on the tip of rice used.
Salt to taste and serve.
whoops forgot the temps. Medium for the 4-8 hour one and then high for the rice.
French Dip- 1 beef roast + 2 cans of beef consumme. Cook on low for 6-8 hours and serve over rolls. We had it this weekend- yummy!

I love to make pinto beans and serve it with cornbread. The next day I make chili with the leftover beans. I add canned kidney beans, onions, tomatoes, and green pepper with some chili powder. My kids love chili with shredded cheese on top.

I like to do salsa chicken. A few boneless/skinless chicken breasts and a jar of salsa. Shred it up and serve over rice or in tortillas.
Cranberry pork is another easy and good one. a hunk of pork loin with a can of whole berry cranberry sauce. Mmmmm.
I make this filling to put into tortillas for “tacos”.
1 tub Santa Fe Philly Cream cheese
1 can diced tomatoes (rotel or regular, depending on how spicy you want it)
1 to 1.5 lbs of chicken breasts.
That’s it. I add whatever toppings I have on hand (like cheese/sour cream/salsa) to the tacos and serve it with rice and/or refried beans. It is great!
I substitute turkey sausage crumbled up and use tortilla chips. I have to triple it sometimes though. Great tailgating recipe!!
One of my favorite recipes to do in the crock-pot is chopped BBQ. It makes really good BBQ and it’s so easy!
3-4 pound Boston Butt
1 small onion, sliced
1/3 cup water
salt
pepper
1 bottle of your favorite BBQ sauce
Place meat in crock-pot and pour water around it. Cover meat with salt and pepper to taste and place onion slices on top. Cook for 8 hours. Drain the liquid out and throw away the onion pieces. Finely chop or pull apart the meat and mix in BBQ sauce and cook for another 30 minutes or so to heat all the way through. I serve mine as sandwiches on hamburger buns. Yum yum!!
We love this too! To add a different flavor, when you pull the hot meat out to shred it up, cover it with some Italian dressing, before mixing in the bbq sauce. So yummy!
I love to make BBQ shredded chicken sandwiches. It is so easy. You just put 4 boneless skinless frozen chicken breast in the slow cooker. I usually rub some garlic salt and pepper on them. Then add one botte of BBQ sauce. I have tried a few different ones. My favorite so far is sweet baby rays hickory and brown sugar. Then cook on low for 5-8 hours. Stir occassional-the chicken with break apart. We like to eat these on the Hawaiian sub rolls or buns. So yummy!
This one sounds so good! I’m not real good with many chicken recipes so this is one I will definitely have to try!
