A couple weeks ago I post a tip about stretching your muffin mix by using extra milk and I got several comments, including this one great tip from a reader!
She says that she uses the mini muffin pans to make muffins (obviously) but she also does it with brownie mixes and cookie dough to make bite sized (and great for travel, school lunches, etc!) treats! (Tip for using frozen cookie dough, cut each piece into fourths and cook one piece per muffin cup.)

This is a great tip to make convenience snacks more healthy, too. Instead of buying the prepackaged snacks for lunches and car rides…bake them up myself! Love it!
Most of us eat way too much carb and sugar anyway, not only is this a great money saver but good for portion control as well. Thanks for the tip!
I alway use the mini pan to make all the kids cup cakes for school parties. I have to make about 75 enough for 3 classes. I can get all 75 mini plus 6 regular cupcakes out of one box of cake mix. The kids still love them and there is always so much other party food they don’t go to waste!!!
