I have already found some hidden gems! Yesterday I took some time to move things around and really take inventory of what I had on hand. I also made a week’s worth of meal plans. In my treasure hunting adventures I found shrimp, some fancy Mexican cheese, lots of peanut butter, grits, chorizo, and so much more. Last night the plan was to make the shrimp with grits. Life got in the way. Instead we had eggs with toast for dinner.
Breakfast
This morning for breakfast the kids ate leftover pancakes, peanut butter, and grapes. My husband and I ate chorizo and egg tacos.
Lunch
The 2 big kids eat at school. I found half a cooked chicken breast in the fridge. Nico took sliced chicken, cheese, grapes, cucumbers, chips, and graham crackers. My husband and I are eating chicken salad sandwiches from the rest of the leftover chicken, grapes, and chips.
Snack
Both of my big kids took granola bars, cheese sticks, and mandarins. For Nico’s snack he usually eats the rest of his lunch. My husband and I eat whatever fruit and nuts we have or a protein shake.
Dinner
Tonight is going to be shrimp and grits with a broccoli slaw. I found some tomatoes, green onions, and parsley that needs to be eaten. I am going to dice up those and add them into the shrimp towards the end. That way they aren’t mushy but not cold either. I have a tiny bit of cabbage, carrots, and broccoli that needs to be eaten up. I am going to mix all of those up. To make into a slaw with an apple cider, olive oil, mayo, and lemon juice.
