It is so cold here! In my freezer I had some beans I had previously cooked, frozen celery, and lots of hamburger meat. One the lingering things in my pantry is a chili seasoning pack. Then I found a bell pepper in my fridge that really needed to be used up. I decided to make chili for dinner. Chili is always a huge hit in my house. We top it with sour cream, cheese, and onions all of which I already have. Added bonus, I made a huge pot so we have leftovers While at the store today I did have to buy saltine crackers.
One of the ways I am able to eat out less and trick my family into eating left overs is by recreating leftovers into a new dish. We all know leftovers are a life saver when you don’t want to or don’t have time to cook. If your family is like mine they want no part of leftovers. They avoid them like the plague. If I make the left overs look new and shiny. They disappear quick! Tonight it will be just chili. Sunday we will have chili cheese hot dogs, and Frito chili pie. It will take me minutes to heat up the hot dogs. I will make sure to chop up extra onion and grate extra cheese tonight. That way on Sunday I don’t have to do much for dinner to be ready.
This morning for breakfast we ate the quiche from yesterday.
All 3 Kids ate at school. My husband took a ham sandwich, chips, and fruit. I ate a sweet potato.
The kids ate cereal. Snacks are starting to run low. But I have about 4 boxes of flavored cheerios. I am not buying more snacks until we are down to only 2 extra boxes.
Tonight is going to be chili with crackers and all the fixings.
