If you are looking for an easy side dish, try slow cooker mashed potatoes. These are so easy and will ensure that your potatoes are hot when serving them up with your favorite main dish.
- 2½ lbs potatoes, peeled and cut into chunks (I used regular baking potatoes but you can use new potatoes if you prefer)
- ½ c. water
- ½ c. butter, cut into chunks
- ½ tbsp salt
- 1 tsp garlic powder (this is optional... and if you don't like a lot of garlic, reduce to ½ tsp)
- ½ tsp black pepper
- 1 c. milk
- ¼ c. mayo
- Spray inside of slow cooker with non-stick spray.
- Place potatoes and butter in slow cooker.
- Sprinkle with salt, garlic powder, and black pepper.
- Pour water over potatoes.
- Cover and cook on high for 3½-4 hours.
- Once potatoes are fork tender, pour in milk and mayo. Do not pour out the liquid that is already in the slow cooker.
- Mash with potato masher or mix with an electric mixer.
- If you aren't ready to serve, reduce the heat to low and put the lid back on.
