I am on a mission to use up every last bit of the ham! This morning I chopped up some and fried it. I added 1/2 of that to a quiche. We are going to eat that for breakfast tomorrow. The other half will be for salads. I also sliced some off for sandwiches later on. That gave me 3 bags each about a pound. Two I froze the other one I left out. The rest of the meat and bone was added to a soup for dinner.
I had a little kale, 3 green onions, 1 carrots, parsley, 2 stalks of celery, and 2 white radishes that needed to be used up. The little bits of veggies that are left over at the end of the week make for a great soup base. I like to chop up whatever I have left, saute it in a pan with a little oil or butter. After they are toasted and wilted, add some sort of meat, and broth or wine. As you are cooking it season it to taste. You really can’t go wrong just add whatever you like or at least salt and pepper. Cook for a few hours and serve with crackers or warm bread.
Breakfast
This morning for breakfast I ate an egg with toast. The kids and my husband ate leftover steak from last night.
Lunch
All 3 kids are eating at school. My husband took a ham sandwich, pork rinds, and pineapple. I ate leftover beet salad and a sweet potato.
Snack
The two big kids took jello we made from boxes we found in the pantry, graham crackers, and mandarins. Nico will eat jello and teddy grahams. My husband took apple slices and peanut butter. I will eat cantaloupe and pineapple.
Dinner
Tonight is going to be a soup made with the ham bone and Kale. I found a box of Bisquick mix in my pantry. It will make super easy biscuits to go with dinner.
