If you are looking for great slow cooker recipes for fish, try this Salmon with Cilantro & Lime. The cilantro and lime pair so well and flavor the fish perfectly. This is such a healthy recipe that you don’t have to feel guilty for eating tons of it!
- 3-4 salmon fillets
- ¾ cup cilantro, stems removed, chopped (I used 2 tbsp cilantro paste)
- 2 garlic cloves, finely chopped or pressed
- 2-3 tbsp lime juice
- 1 tbsp olive oil
- ¼ tsp salt
- Mix all ingredients except for the salmon together in a small bowl.
- Spray slow cooker with non-stick spray and place salmon skin side down in a single layer on the bottom.
- Pour herb mixture over fish.
- Cover and cook on low for 2 - 2½ hours.
